Ingredients


125 g/ 5oz Frozen pineapple chunks (see notes)
25 Green grapes (seedless)
125 ml/ 1/2 cup Coconut water
A generous squeeze of lime juice (to taste)
5 Fresh mint leaves
1 Large handful fresh spinach leaves (approx 50g/ 2oz)
2 tsp Coconut milk (tinned) (half fat is fine)

Instructions
Put all of the ingredients into a blender and whizz until smooth
Taste and add more lime juice if necessary
Drink immediately

1/2 Tbsp coconut oil
1 yellow onion, chopped
3 cloves garlic, minced
2 boneless skinless chicken breasts, cut into small pieces
1 large carrot, chopped
1 large broccoli crown, chopped
About 1 cup shiitake mushrooms, sliced
1 medium zucchini, sliced
3/4 tsp ground ginger
1/2 tsp ground turmeric
Pinch of cayenne pepper

1/4 tsp fish sauce (I recommend this brand, which has no gluten or sugar)

INGREDIENTS
2 cups cauliflower florets
1 tablespoon tahini
1 tablespoon olive oil
1 tablespoon lemon juice
1/2 teaspoon turmeric
1/8 teaspoon salt
2 cups baby spinach
1/4 cup thinly sliced red onion
1/2 cup cooked whole wheat pearl couscous
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon black pepper
1/8 teaspoon salt

DIRECTIONS
Preheat oven to 375˚ F. Place cauliflower florets in a roasting pan. In a small bowl, whisk together tahini, olive oil, lemon juice, turmeric, and salt.
